Lemon Cake Pudding
Make with lemon, lime, or orange juice and rind. This is a light tasting dessert that you can “dress
up” by serving with fresh blueberries or raspberries..
Sift or stir together into mixing bowl:
¼ cup flour
1 cup sugar
¼ teaspoon salt
Mix together and stir into dry ingredients:
1 ½ teaspoon grated lemon rind
¼ cup lemon juice
2 egg yolks, well beaten
1 cup milk
Fold in:
2 egg whites, stiffly beaten
Pour into 1-qt. casserole or 6 custard cups. Set in pan of water (1”deep). Bake at 350 degrees for 45 to 50 minutes. Serve warm or cold, with or without whipped cream.
Makes 6 servings.
