Recipe of the Month   May 2010 

RHUBARB SAUCE

4 cups chopped rhubarb
1/2 cup water
3/4 cup sugar (more if you wish)
1/2 teaspoon cinnamon

Place rhubarb and water in 1 1/2 quart casserole. Cover. Microwave 10 minutes on HIGH or until rhubarb is tender. Stir well after 5 minutes.
Mash with a fork. Stir in sugar and cinnamon. Cool.


A light dessert was requested to complete a 40th anniversary dinner. We served angel food cake with or without ice cream and passed both
the Rhubarb Sauce and strawberries so folks had a choice of one or combine them.
