Colcannon (a requested recipe…try it, you might like it) 1 small head cabbage, cut into small pieces 1 pound potatoes (4-5 medium) 2 Tablespoons butter + extra 1 large onion, chopped Small amount of milk Salt and pepper to taste Clean cabbage, cut into wedges and then small pieces. Cook In boiling water until tender, about 20 minutes. Drain well. Meanwhile peel and cook potatoes until tender. Drain well; mash leaving small chunks. Add milk as needed. Sauté onions in butter until soft and slightly caramelized. Stir onions and cabbage into potatoes. Add extra butter if desired along with salt and pepper. Serve hot. Serves 4-6. |
