SESAME CHEESE BALLS Here is a very simple appetizer that can be made the day before the event. 1/2 cup slivered almonds7 tablespoons sesame seeds 1 (8 oz.) pkg. light cream cheese, room temperature 2 tablespoons grated Parmesan cheese 2 teaspoons instant or fresh minced onion Salt and pepper to taste 5 or more cherry or grape tomatoes for garnish Bunch of Italian parsley, separated Cocktail picks Toast almonds either in a dry skillet over medium heat watched carefully and shaken often or on a cookie sheet in oven at 350 degrees for 10 minutes. Place sesame seeds in a dry skillet over medium heat; stir until golden. Cool. Beat together cream cheese, Parmesan cheese and onion. Season with salt and pepper. Cover and refrigerate for at least 20 minutes. Stir in cooled sesame seeds. Shape into 20 balls. Finely chop parsley to equal 2 tablespoons; mix with almonds on wax paper. Roll cheese balls in the mixture to coat. Arrange on a bed of parsley. Garnish with tomatoes. Cover and refrigerate until ready to serve. Insert a cocktail pick in each one for easy serving. Note: This recipe could easily be doubled for a larger crowd. They will disappear quickly after the first person gets a taste. |
