2 pounds fresh green beans
Frozen or canned may be substituted
1 Tablespoon butter
1 Tablespoon shallots or green onions, minced
1 Tablespoon tarragon, roughly chopped
Salt and pepper to taste
Cook fresh beans in salted water until just tender,
About 5 minutes. Heat frozen or canned beans.
Drain. Sauté shallots in butter until tender. Add
beans and sauté two to three minutes until hot.
Stir in chopped tarragon; season with salt &/or
pepper. Serves 8.
